Ingredients
- 1 cup cooked quinoa
- 1/2 cup canned black beans (rinsed)
- 1/2 avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 1 handful fresh spinach
- 1 tbsp olive oil
- Juice of 1/2 lemon
- Salt & pepper to taste
Instructions
- In a bowl, combine quinoa, spinach, and black beans.
- Add tomatoes and avocado on top.
- Drizzle with olive oil and lemon juice.

Grilled Chicken & Veggie Wrap

Ingredients
- 1 whole wheat tortilla
- 1 grilled chicken breast, sliced
- 1/4 cup shredded carrots
- 1/4 cucumber, sliced
- 1 tbsp hummus
- 1 handful baby greens
- Optional: hot sauce or mustard
Instructions

Ingredients
- 1 cup plain Greek yogurt

- 1/2 banana, sliced
- Sprinkle of chia seeds or cinnamon

- Toast the bread.
- Spread peanut butter and add banana slices.
